Being a diabetic, I wondered if you have any lighter recipes? Do you make any pickles or something that accompanies the main dish? I find that even if I can't eat much of the rich foods I can often times get by with the homemade pickles, meat or other protein and vegetable. I have a low fat, low fiber restriction because my stomach doesn't digest those well. My Mom's from the South so there was always chutneys, stewed fruit or veggies, homemade jam, pickles usually several kinds. So I grew up with that with special meals. Mom used her canned tomatoes in her cooking. She made refrigerator pickles, sweet pickles, pickled beets, chutney or relish, tomato jam, strawberry, apricot, and peach jam. She also canned fruit. So I helped her and our pantry was full. I was spoiled and didn't know it! Such amazing food came out of those loving hands. I didn't even know there were mixes of any kind until I was at a friends house in high school and opened their cupboards and all they had were boxes of hamburger helper, rice a roni, cake mixes, etc. I came home and told Mom all about it. There is nothing wrong with those I just had never known about them before. Dad had a garden. We had to live frugally we had no money. I learned how to stretch what we had and I am glad I know now as I sure use those skills now!

Are you able to have dairy? If so, I have a few recipes. Stracciatella alla Romana, for one.
I'll bear you in mind next time I post a recipe. But with your excellent upbringing, I'm pretty sure you don't need my help to feed yourself well.
